I don't know that anyone has ever actually tried doing so, but it should be possible. Here is basically what you would need to do:
1. Plug the hard drive you want to install Mac OS 8.6 on into your computer.
2. Download WinRawrite (link in Related links section) and make an "image" of the drive.
3. Download and install SheepShaver, a Mac emulator. You will need a copy of Mac OS 8.6 and a Mac ROM file. For legal reasons, i cannot give you a download link to these if you don't have them.
4. When setting up SheepShaver, use the image file you made of your hard drive as the hard disk image.
5. Install Mac OS 8.6 inside SheepShaver.
6. Close SheepShaver.
7. Use WinRawrite to write the image back to the hard drive.

Easy answer to try first is using your windows CD to do a repair install. Go through like you are installing new windows, and when it searches your hard drive it will show you your old windows install folder and ask if you would like to repair it. Windows 98 cannot interact with the Windows NT file system. To install Windows 98, you will need to use a partition tool to divide the hard drive, and then install a special boot manager to load them both.
Boot from the Windows XP CD and let it reformat the drive. WIndows XP cannot use the native Ubuntu filesystem, so you'll need to reformat the drive anyway and you might as well do it using the XP install disc.
