they are NOT part of the Chinese tradition, they are part of the JAPANESE tradition, which goes back hundreds of years, just like many other countries have their own traditions that go back for many years.
Traditionally they stayed at home but that tradition is fading.
Not all Americans do, it appears to be a Massachusetts/New England tradition. When my family moved from MA down to the south in Virginia, no one ever heard of the Chinese food on New Years eve tradition. We still keep the tradition going, only there aren't any crowds/long waits to worry about in VA :-)
This is most likely because of tradition, and also it is very healthy and not very expensive. An example of tradition would be like Chinese eating rise, or Japanses eating sushi.
