No "the old man" should not be capitalized. Example: I saw the man walk by again. The "the" in front makes improper.
That really depends on the physical condition of the person. A person that hikes and backpacks can easily walk 10 miles a day even with a backpack. 43 years old is not "old". A physically fit man can walk a long distance.
