Triacetin is glycerol triacetate - an ester made from acetic acid (vinegar) and glycerin. So they are similar in that glycerin is used to make triacetin.

Triacetin is used in foods as a humectant - it keeps them moist. Glycerin does the same, however it is also slightly sweeter.
