Check the build number. 7600 is RTM. Anything between 7100 and 7600 is a Release Candidate. Anything before 7100 is a beta.

XP Mode only works on Windows 7 Professional, Windows 7 Ultimate, and Windows 7 Enterprise.
You have to buy it, as it does not come automatically with any version of Windows.
It can be any version of Windows 7 (Starter, Home Basic, Home Premium, Professional or Ultimate) but if you want to keep your stuff buy an 'upgrade' version of the DVD. If your computer has become unstable, or cannot boot into Windows, choose the full install as this will install a fresh copy onto your computer. (Only choose this if you want to wipe all the stuff off your hard drive) but if you do all your stuff will be in a folder called Windows.old I recommend Windows 7 Ultimate but it is the most expensive option. Windows 7 Starter is the cheapest but doesn't have the full features of Ultimate. Most people go for Home Premium. (I've got Windows 7 Ultimate Beta)
Windows Touch is only available in the Home Premium, Professional, and Ultimate editions of Windows 7.

The Windows 7 RC is available for free download at Microsoft's website (see Related Links). However, the RC happens to expire June 2010, and will require you to purchase a full version of Windows afterwords. There is no way to obtain a free version of Windows 7 legally.
Personally I would say it's Windows 7 Professional. Mostly because it's more of a "stripper out" version of Home Premium and has pretty much everything that Ultimate has.
Yes, you can, but you cannot charge for Windows 7 RC (it's free). Also be aware that the RC expires June 2010, the user of the computer must buy the retail version of Windows 7 in order to continue using it after that time.
