It depends on your operating system and the installed software. The operating system (Windows, Mac, Linux) reads most file types by default, some files requires additional programs to decipher the file code type in order to be opened such as codecs to process music and video files so you can view them.

Most computer programs offer a choice of what format you wish to use to save your files. The main reason is portability. If I have the latest version of a particular program and I save it in that program's native format I will always be able to open that file.
