A substance that is not a solid or gas, takes the shape of its container, has definite volume, but no definite shape.
It it takes the shape of the container, it can not be a solid. So, that narrows it down to being a liquid or a gas. A gas is easily compressed, so, the answer is most likely it is a liquid. Caveat: liquids can be compressed, but not easily.

liquid consists of free moving particles so it just takes the shape of whatever is is in (beaker, glass etc..) and plus you can measure exactly how much liquid you have, though I'm not sure about the shape part
It depends on the pressure and temperature.
Water takes the shape of whatever it surrounds but on the surface it takes on a level shape
