It could be that the fuel pump is worn and the bearings are loose. If that happens the pump will not be able to function as well when it's cold.
It could also be that you have some water in the fuel filter and it's freezing, blocking a large enough surface area of the filter to reduce the fuel flow. If that's the case, try adding a little alcohol to the tank (gas line antifreeze). If that's the problem the alcohol will solve it quickly.

It COULD be the fuel filter or the fuel pump. If you haven't replaced the fuel filter, try that. A fuel pressure gauge will tell you if you are losing fuel pressure.

57 - 61 psi for the 95 jimmy 4.3 vortec so it is probable the same

The plastic impeller that pumps fuel MELTS when there is no fuel to keep it cool! problem is no fuel pressure. Replace the fuel pump.
