That shouldn't be a problem. Cats are "obligate carnivores"; they evolved to hunt other animals and eat meat. From a purely evolutionary standpoint, cats more often eat birds than cows, so it might be better if you fed your kitten chicken rather than beef. And more on the "rare" side than "well done". But it shouldn't matter much.
For a 9-week-old kitten, be sure to cut the pieces small, which it sounds like you are doing.
