The liver has many functions. Some of the functions are: to produce substances that break down fats, convert glucose to glycogen, produce urea (the main substance of urine), make certain amino acids (the building blocks of proteins), filter harmful substances from the blood (such as alcohol), storage of vitamins and minerals (vitamins A, D, K and B12) and maintain a proper level or glucose in the blood. The liver is also responsible for producing cholesterol. It produces about 80% of the cholesterol in your body.
Digested food is taken from the gut and travels up to the liver. Food is then broken down and purified into its simplest form. The liver is responsible for producing 80% of cholesterol and also helps break down food that travels through the small intestine after leaving the stomach.
Most proteins are made from unsaturated cholesterol which is why it is necessary in diet.
Physiologically;
to produce IGF-1 (insulin-like growth factor-1) which obviously effects growth, and it also produces thrombopoitien which stimulates generation of thrombocytes platlets in the blood to help clotting.
I want to add that the liver is a regenaerative organ, the only one capable of reproducing itself.
