If your question is why do they do this, then it is to increase the rate of photosynthesis. The advantage of doing this is that by increasing the carbon dioxide concentration, you increase the rate of photosynthesis, thus increasing the quality of the plants and allowing the market gardeners to profit more upon the selling of these plants (this is an advantage for the gardeners as opposed to anyone else). Advantages for the buyers of said plant could be that the plants grown in these high carbon dioxide concentrated environments are somehow more healthy or have better effects on the human body upon consumption.

How does carbon trading work?
