Covering your mare is basically just another word for breeding your horse.
If you breed your mare on howrse and it haves its foal then you must wait 10 moths (game time) to breed that mare again. If you covered your stallion on howrse, you dont have to wait at all until you send a covering again. you could send 3 coverings in one day if you wanted. Stallions have no time limit. go to your horse's page>in the bottom right hand corner there will be a button that says offer a covering>click that and type in the username of the person who owns the mare that you are covering> click reserve the covering for the mare that you are breeding with

in order to get a uni on horwse you have to breed two uni's must be same breed, at exactly 6:23 or 18:23 game time.
You cannot make your own breed (howrse introduces new ones into the game every so often) but you can cross any types of breeds that you want, ending up with horses with numerous bloodlines.
