It is certainly possible, but very very very very very unlikely. If the universe is infinite, then literally anything you can think of has a finite probablity of existing in reality. Nobody has the powers of those in X-men now but that is no reason to suppose that they could not have them at some time in the future, especially if any such mutation proved to have an evolutionary advantage. I think that is what the whole film series is about.
