A potato is a structure that stores nutrients and food for a plant.
The scientific name for this structure is called a Tuber (not Tuba)
There are two types of tuber, stem and root.
Stem Tubers are potatoes, this is because they shoot out a stem when the plant grows.
Root Tubas start off as roots and then enlarge to become storage organs, still acting as a main root.

In rhizomes - i.e the 'root ginger' part of the ginger plant, and the 'potato' part of the potato plant. Howeve the potato is a tuber, not a rhizome.

The most nutrient part of a potato is the skin... the skin is the very outside of the potato.
The part of the sweet potato plant that you eat is the root. The entire root is edible.
The white potatoes are cut into many parts, making sure that each part has at least one “eye” (bud). Each piece of potato will grow from this part into an entirely new potato plant.
The part of the potato that we eat is a root, in which the potato plant has stored nutrients for its own use. Starch is a convenient nutrient with which to store calories that the plant can use to grow. We, of course, can also use starch for our own purposes.
