I have been noticing this as well and its quite remarkable. Supermarket red peppers from Mexico seem to be the culprit. I once made the mistake of over fertilizing with uncomposted sewage and it resulted in red peppers that directly transferred the smell into the meat of the vegetable.
That depends on the size and cut of the red pepper. One cup of red pepper strips would weigh less than one cup of red pepper finely diced.

YES but cut the amount in half. If your recipe calls for one teaspoon of crushed red pepper you can do a 1/2 teaspoon of cayenne instead

What I would do is stand the pepper right side up on your cutting board. Then cut it in half slowly (don't do it too fast because the inside of the pepper is kind of hollow, so the blade will go down too fast). Then get rid of the seeds and the hard middle part if you want. Afterwards, you can cut the pepper into slices or chop them.

No I would if it's the closest you've got to white pepper. Cut down the amount though.
You can cut into it to be sure it is brown. With a meat thermometer, you can measure the proper temperature for its being done (180?). Finally, an experienced cook will note by the feel of the sausage that it is done.
To get the heavy pepper taste out of your mouth you have to brush your teeth with strong toothpaste. Then you should eat bread and noodles. That is what works best for me.
