It's called an "agouti." It's an animal about the size of a small dog that looks like it has the head of a squirrel, with the body of a rabbit. There are several "breeds" throughout the Yucatan. They eat just about anything, and in the Cancun resorts, it's common to see them foraging about, especially in the early mornings. The general consensus is that they are cute and (basically) harmless.
