No, if the strawberries are fresh, and not overripe, it is perfectly fine to leave them at room temperature, especially if you will be using them the same day. However, I would wait until ready to use them before washing them. Just be sure to let them dry well after washing, unless they will be sliced, or mixed with sugar.
