The earliest news we have of liturgical rules is the didache which dates back to the late first or early second century, and we can see hints of liturgy in the acts of the apostles, as they say that the community worshiped by hearing the word of God in the synagogues and breaking the bread in the homes. Soon after they were expelled from the synagogues and this was all done together. This means that the two parts of the liturgy that we have stem from the apostles, and so are a received inheritance we cannot just change because we like spontaneity.
If, however, a Catholic wants a less organized and more spontaneous moment for worship, there is nothing stopping them from organizing worship groups apart from mass. They would still have to go to mass once a week, but this would be a way to satisfy their desire for spontaneous worship.
