If you are going to sign it you should be able to read it. If you are forced to sign something that you cannot read, put a hand written note next to your signature saying that you are not able to read the paper that your are signing. If it comes to court that gives you grounds to challenge it.
Most people don't know that if something is hand written on a contract is contrary to something that is printed the you go by what is hand written.
If you sign some complicated contract that you don't understand you could add "subject to my attorneys approval within 14 days," and then sign it. This will drive them nuts but it gives you an out. All you would have to do is say sorry my lawyer says no.
