Cooking a potato without foil will work. One of the best ways to bake a potato is to rub it in olive oil, sprinkle with salt and set on the oven rack for an hour or so until tender.
Do NOT eat a cooked potato after even a few hours of being room temperature. Bacteria forms or can form on food if left out too long. It is best to keep cooked foods above 150 degrees or below 40 degrees to keep them free from bacteria.
