If the M-Rating is actually used to benefit the story, the supposed increased violence is done tastefully and more actual mature content is added, yes.
But if it's just for the sake of being "gritty" and add tasteless portrayals of graphic violence and sexual content a la God of War, then no.
Bottom line, an M-rated Final Fantasy is a pretty interesting idea, but it better not be used as a cheap tactic to get the game to sell. I especially don't expect Cloud to turn into Kratos anytime soon.
