I have worked in the Veterinarian field for over 3 years now. You can take a dead animal to a Vet for disposal, cremation, or even if you would like to have an autopsy done. Naturally all of these options you usually have to pay for.
Some states it is illegal to bury an animal in your yard. I would check on that. But what they don't know won't hurt them.
You do not HAVE to take a dead animal to a Vet.
Hope this helps.
