You cannot redo bosses in Spirit Tracks without restarting the game. The only exception is the final boss since you cannot technically 'beat' the game.

To get Zelda's(3rd generation) body back in The Legend of Zelda: Spirit Tracks, you must beat ALL five temples in the game, (forest ,snow ,ocean, fire, sand)and defeat the second of the three part final boss.
in most Zelda games once you beat the final boss (in lots of others to) it does not let you save because you cannot complete all the sidequests and stuff that is most likely what happened what if for some strange reason you wanted to do the whole temple right from the start would be kinda hard without your phantom friend. right?
The spirit temple is in two halves, you get there as an adult and discover you can't do anything. You then have to return as a child using the spirit temple warp song that is taught to you by Shiek. Once you are there as a child, you meet Nabuuro (I think thats her name, haven't played in a while) who asks you to retrieve a treasure for her. You crawl through the hole and do that half of the temple. Eventually you find the silver gauntlets, the treasure Nabuuro was looking for. A cut scene then plays, showing Nabuuro being abducted by the witches. She tells you to 'Get out of here Now!'. This concludes your child exploration of the spirit temple. You then go back to the temple of time and turn into an adult, returning to the Spirit temple with the iron gauntlets equipped. You can now move the heavy stone blocking the way and complete the second half of the temple. During the exploration of the second half, you find the mirror shield which is a key item in the final boss battle of the spirit temple. Hope this helps.
