This means to "stand up for someone", "have their back", "take up for someone", etc. It means that, for example, someone was gossiping about your best friend or boyfriend/girlfriend in your presence. You would defend or "stick up" for that person by maybe saying someone like "that's not true" or "don't talk about my friend like that", etc.

While it is hard to defend or stick up for someone who will not do the same for you, I can think of two reasons to do so: 1. Do unto others as you want them to do unto you. 2. Doing good to others. Of course, that doesn't mean that I would stick up for someone who is doing wrong or is in the wrong, but if they are not doing anything wrong and they are in the right, I would take the high road and stick up for them. Also, that does not mean that I would physically fight for anyone, but if someone was getting beat up, I would call for help even if the person would not do the same for me.
