Probably because the profit ratio of cocoa beans is higher then most crops, and by acre and by intensity of work efford it is not the most efficient way to produce food. Rice, wheat or corn are concidered crops for food.

The Aztecs did not have a flag as we know it today. Flags as national symbols were not commonly used in the same way during the time of the Aztec civilization.
Chocolate is made from the seeds of the cacao bean. Inside the yellow/red cacao fruit are the cocoa beans. This is what chocolate is made of. The beans are then fermentedfor about a week and then dried again for a week. The chocolate flavor we all know comes from yeast breaking down the complex sugars. The beans are then roasted for more flavor. The process of shell removing is called winnowing. The beans are then grinded into a gooey liquid -Chocolate liquor. The liquor will then be seperated. Cocoa butter from cocoa solids. The "butter"is used in moistuizers and white chocolate. The solids are then grounded for cocoa powder most chocolate however uses the unsweetened baers chocolate with solids and butter, they then mix in sugar flavoring and milk. This is all mixed together in a process called conching. The mixture is heated and cooled during tempering. The chocolate crystals are made into an orderly way so chocolate bars are shiny and brittle.
Tetteh Quarshie was born in 1842 . He served as an apprentice in a blacksmith's shop at Akropong belonging to the Basel Missionaries. His hobby was farming. In 1870, Tetteh Quarshie went to work on the island of Fernando Po in the Gulf of Guinea where, under the Spanish, cocoa, imported from South America, was grown and guarded like gold. Workers were searched before they left the island to ensure that the precious cocoa beans didn't leave with them. Tetteh Quarshie realised how this crop could help him and his family and planned a way to carry the beans to the Gold Coast (Ghana). About 1879 he returned to Ghana with several cocoa beans (the Amelonado beans), which he had swallowed. He went through the routine searches and managed to leave the island safely. Once off the island he waited for nature to take it's course and recovered the beans. He planted the seeds in Mampong, near Akropong in the Akwapim area of Ghana where he felt that the climate was suitable. The seeds took root successfully. Tetteh Quashie made history. He distributed pods to friends and relatives who undertook to plant the cocoa. They, in turn, handed seeds other farmers. Soon the planting spread to what is now the Ashanti Region and the area became the biggest cocoa producing area in the world. It was at this point that the Basel Missionaries took an interest and exported cocoa to Switzerland. The result was that the Swiss chocolate industry was born.
The Aztecs used chocolate to make a beverage which they introduced to the Spanish explorers. The enjoyment of this beverage with chocolate made it's way to Europe where it became very popular.
