well Athena created the olive tree, gaia who is earth is... well earth and naturery, pan is a significent when it comes to woods so there isnt a specific god nor goddess for trees.
It should be noted, too, that many of the gods had a tree or trees that were sacred to them. Zeus was the oak, Athena the olive, Apollo the Laurel, etc.
