Defensive proteins are manufactured by the immune system. The immune system is the system of biological structures and processes in the body that protects against disease.
Proteins that are involved in our body immune system are called antibodies or immunoglobulins (IgG) produced by B cells. There are different kind of Immunonoglobulins IgA, IgM, IgG (antibodies). In addition, cytotoxins, histamines, interferons, tumour necrosis factors are also produced by white blood cells to defend us from pathogens.
Nitrogen is produced when the body breaks down proteins for energy.

Antibodies
Not sure exactly what you mean, there are hundreds of different proteins, but in nutrition you have: first class proteins: proteins that contain the eight essential amino acids that cannot be produced in the human body and so must be eaten, they are usually found in meat. second class protein: proteins that are made up of non- essential amino acids, those that can be produced in the body.
Here is five types of proteins: Enzymes that catalyze biochemical reactions-kinase, phosphatease, APOBEC3C. Carrier proteins- such as glucose transporter, Na/K pumps. Defensive proteins-antibodies or immunoglobulins, interferons, interlukins. Structural proetins-collagen and keratin that builds your body. Hormones-Insulin, glucagon that regulates sugar level in body.
