Health, safety and security are important in an office environment. If someone were to be injured on the premises and health and safety were not up to standards, the office is likely to be sued.

A health and safety policy is an organization's statement regarding its commitment to maintaining a safe and healthy work environment. In the United States and Canada, employers are legally required to maintain a safe and healthy workplace. An employer's health and safety policy communicate this safety commitment and obligation to each individual employee. Similar to a health and safety program, the size and scope of an employer's health and safety policy will depend on the size and needs of the particular organization.
The assistant director is responsible for tracking the daily progress of the filming production schedule, preparing daily call sheets and maintaining the order on the site. He is also in-charge of the health and safety of the crew.
"Health and safety knowledge" means information, and skills that relate to preserving or maintaining people free of illness, injury, etc.
A Health and Safety Policy is a document describing in a few words the policy of the company with regard to health and safety in the workplace, and perhaps also product safety. Office safety regulations are likely to vary from office to office. To find ones that are most likely to suit yourself, the best thing to do would be to speak to the health and safety head at the office you work in.
