Empty space. Depending on the circumstances there might be things like photons, if you can call photons things. Even empty space is never truly empty - there is something called zero-point energy and elementary particles are constantly popping into and out of existence.

The previous answer is completely wrong. Air is made up of molecules of various kinds of gas. There is no "air" between the molecules in a knife, for example, or a rubber band, or your bone. The molecules in these materials is mostly empty space, filled with nothing at all. The same thing goes for the atoms that make up the molecules. If you could scale up a hydrogen atom until the proton in its nucleus was the size of a grain of sand, the electron in its orbit around the nucleus would be over half a mile, or a kilometer, away. Between the proton and the electron is nothing except an electrostatic force field. Between molecules in that knife is nothing except force fields. Most of everything is empty space.
A better analogy than the sponge would be a jar filled with marbles. Now scale up the marbles until they are each the size of a city. Now put a small paper clip in the centre of each city-sized marble. Now get rid of the marble. Don't fill the spaces with air or anything else. The paper clips now represent molecules in a solid, separated from one another by nothing at all, just empty space, in which some inter-molecular forces pull the molecules together, and their random relative velocities act to keep the molecules apart, so that at just this distance (and at this temperature) the present distance between them is in equilibrium.
