Basically you don't. You only cook and consume the leaf-buds i.e. the sprouts. The sprouts should be removed from the stalk and then cooked. The stalk is far too woody to either cook or consume. If you have a goat give it the stalk as a Christmas treat.

Over high heat, bring one gallon of water to a rolling boil in a blanching pot. Blanch one pound of Brussels sprouts at a time. Start counting blanching time as soon as the water returns to a boil. Small heads will take 3 minutes, medium heads will take 4 minutes, and large heads will take 5 minutes. Instantly put blanched sprouts into a ice water bath to stop the cooking process. Cooling will be the same as blanching time.

If you want bright green tender leaves...steam boiling. It will take one to five minutes, and in a steamer, six to twelve minutes, depending on the amount Brussel Sprouts/leaves.

I would say smother them like you do cabbage . Add a little sugar when browning. Lots of fiber and healthy
