Catholic baptisms may be on any day, including Sunday. The only day that you may not have a Catholic baptism is during the Eastern Triduum which is Holy Thursday, Good Friday, and Holy Saturday of Holy Week. If you pastor will not have baptisms on Sunday, that is a personal decision of his, most parishes do hold baptisms on Sunday, some of them even during Mass.
Holy Mass is celebrated at Catholic churches, chapels, and oratories throughout the world every day of the year, with the exception of Good Friday. Mass is never celebrated on that day; many parishes have Good Friday services instead, which may include Stations of the Cross and may include the distribution of Holy Communion.
A Catholic has an obligation to attend Mass at a Catholic Church at least every Sunday and Holy Day of Obligation. Baptists are welcome to attend Mass with Catholics, but may not receive the Eucharist. If, in addition to Mass, a Catholic would like to visit a Baptist Church, he or she may do so provided it does not harm his or her faith.
There is no "Holy Order", you may be thinking about Holy Orders which refers to ordination in the Catholic Church.
