Indeed there is only one character who is apparently a Muslim in all of the plays, which would be the Prince of Morocco in Merchant of Venice. Mind you there are probably a number of actors called Omar who have played or are playing parts in Shakespeare plays. French actor Omar Sy (often billed as "Omar") for example, or Omar Sharif, or the American Omar Epps, might have played parts in a Shakespeare play at some time.

Shakespeare created two failed suitors for Portia, the Prince of Morocco and the Prince of Aragon. Both are intended to be comic characters, foolish and vain. One presumes that Morocco, coming from where he does, must be a Muslim, but there is not one reference to that fact in the text. The dialogue would be exactly the same if he were Christian. Perhaps he chose Morocco because of the Moroccan embassy to Elizabeth which caused much ado at the time. The Moroccans impressed the English with their courtesy and flamboyance.
