There is nothing better than freshly made ice cream on a hot summer’s day, but getting the recipe wrong can leave you with a slushy mess, or worse, something that tastes foul. Even following the manufacturer’s instructions isn’t fool proof, so here is a how to guide for simple vanilla ice cream, the homemade way. Before you start, make sure you put the ice cream maker mixing tin in the freezer and leave overnight. -Step 1: Milk and vanilla Pour ½ pint of milk into a pan. Add a vanilla pod, cut down the middle and leave to simmer for ½ an hour. -Step 2: Eggs and sugar Beat together 4 eggs and 4 oz of sugar. Remove the vanilla pod from the pan and scrape out the seeds into the milk. Add the milk to the eggs and sugar, stirring constantly. -Step 3: Bring to boil Put the mixture back on the heat and gently (on low) heat it up. Do not let it boil. Let it thicken, then take it off the heat and let it cool. -Step 4: Cream and freezing When it has gone cold, add ½ pint of heavy cream. Take out the ice cream container and put it back in the ice cream maker, and pour in the liquid. Every ice cream maker is different, but you should simply have to plug it in and turn it on, checking on it frequently until the ice cream has a thick, hard consistency, probably about 30- 40 minutes. Some ice cream makers will not make the ice cream very hard, so it may need freezing for a while longer. Simply put it back in the freezer for a while. Once it’s done, you can sit back and enjoy a nice bowl of ice cream. You can even add toppings to it, or change ingredients to make different flavors.
