Yes, but not very often in the US-- John von Neumann being the only one and that only recently . ( Einstein was also one a couple of US stamps, but I consider him to be a more of a physicist than mathematician)

Euler, Gauss, Newton, Descartes and several others have appeared on several foreign stamps from France, Germany, Russia especially.
