The difference between exchange 2003 & 2007 is that ex2003 need to run on 32 bit hardware and can run on 64bit also but exchange 2007 need 64 bit hardware support to install.there is no requirement of smtp and nntp service in 2007 because it inbuilt with 2007 but in 2003 we have to install it. in ex 2007 we need to install power shell and mmc 3.0 but in 2003 there is no need of that.
