Dolphins are a stereotyped symbol..all water creatures were poseidon related, however horses are his sacred animal seeing as he created them. Dolphins are a symbol of aphrodite because she was born in the sea out of foam from Uranus's severed testicles.
Many different Gods are assocaited with dolphins includind Apollo, Dionysus and Posiedon. However the gods usually depicted 'on' dolphins are either Eros or Palaemon.
