A stable boy did all the tasks no one else wanted to do, such as mucking out stalls, tossing hay and straw down into the stalls, carrying water to the horses, etc. A lucky stable boy might eventually work his way up to a stable hand, at which point he could handwalk horses, groom them and help maintain the tack.

Seven, with maybe an hour or two off to go to church on Sundays. They had no concept of "weekend" or "vacation" back then. If you didn't like it, you would get beaten until your mood improved.

A stable boy then did pretty much what a stable boy does now: clean the stalls, feed and water the horses, brush and curry them, wipe them down after a workout, care for their saddle, bridle, and equipment, etc.
