All these brushes achieve different results, but the type of hair will dictate how course or fine the brushstrokes will be, and what medium they're good for. Ideal watercolor brushes will be more absorbent and easy to bend and return to their shape, but if used with oil paints, they will be ruined. Oil paints require a harder paintbrush that will retain its shape against the thick medium, and so coarser hair would be used for that.
