Calculating UTs is actually very simple. First, add together your horse's UTs (intelligence + personality). Add the UT's of that breed. Divide your horse's UTs by the breed max, and you'll get a decimal number. Multiply that by 100 and there is the percentage!

It means you can't train those 2 stats (Intelligence and Personality) for your horse(s).
