This is entirely up to you. However, the minor you choose should enhance your primary program of study (major). For example, it you plan on working with a diverse population, you might want to think about minoring in another language. If you plan to work in an urban area, then maybe a minor in urban studies might be an option. Then again maybe something in human services should be considered. Whatever you choose, it should be in alignment with your overall career goals and objectives.

When looking at a Master's Degree program, it is good to look at the program's course of study, the interest areas of the professors, and the areas of research that the department has produced to see if these are areas of interest for the prospective student. When I am hiring an SLP, it matters little to me where the person went to school. I just want to be sure that they are excellent clinicians.
