The Catholic Church was established by Our Blessed Lord, Jesus Christ, on the Apostles, particularly the Apostle Peter (see Matthew 16:17-19), and He send the Holy Spirit to lead them into all truth (John 16:13). So the Church, itself, is based on the teaching of the Jesus as manifested to His Apostles. Only later did anyone write anything down, and the New Testament was put together, as we have it today, at the end of the fourth century. In other words, there are no "documents" from the early Church and that wasn't that important anyway, Our Blessed Lord never once wrote anything (save in the dirt with His finger), nor did He command His apostles and disciples to write anything.
