Having just returned from Chile we found out that canchas is a large grained dried maize, larger than traditional pop corn, that gets deep fried and sprinkled with salt and cayenne pepper. It's originally a Peruvian dish, but was served in this restaurant in Santiago as an appetizer and has had me hunting for the dried Maize ever since. Haven't found it yet, and would appreciate information about a source.
