Saints days, or feast days, are the specific days set aside by the Church to honor a certain saint. Each saint is assigned a day during the year when they are honored at Mass. Since there are so many thousands of saints, each saint must share his or her special day with several other saints.

Yes, the Catholic Church has more saints than there are days in the year - many, many more. Most days have several saints sharing them. When an 'important' Sunday falls on a saint's day, the Sunday usually takes precedence.

Everyday of the year is a feast day for many saints. However, the saint's feast is not memorialized if it falls on a Sunday or on other important liturgical days such as Good Friday.
Declaring (inaugurating) saints as been a practice of the Church since the earliest days. However, local bishops can no longer declare saints. Only the pope can do that after recommendation from the Sacred Congregation for the Causes of Saints.
