Kingdom Hearts has many 'unlockables':
Keyblades:
Keyblades are unlocked by sealing the keyholes of the worlds. Some Keyblades are only obtained by extra tasks that are not crucial to the storyline (such as Sephiroth and the Hades Tournaments)
Drive Forms:
Drive Forms are unlocked as you progress through the story. Drive forms appear in this order: Valor, Wisdom, Master and Final. There is also the "anti form" which is a mostly random event and cannot happen at will.
Gummi Ships:
Gummi Ships are unlocked in many ways. Most of the Gummi Ships are unlocked by going through the normal Gummi Routes. Others are obtained only by getting an "S" ranking on all three challenges of the specific route.
Gummi Routes/Special Items:
By completing a Gummi Route, you unlock the Gummi Route Challenge missions. These missions help you unlock special items, weapons, shields and power ups for your Gummi Ship.
Magic and Abilities:
Magic and Abilites are another thing unlocked only by progressing through the game's story. Once a certain magic is unlocked, that magic can get better as you proceed through the story. Abilities can also be unlocked by leveling up a certain Drive Form. (for ex: get Glide by leveling up your Final Form)

Yes, Kingdom Hearts Final Mix is kind of like a second Kingdom Hearts 2, but there are some differences in the storyline.
If you mean the order of which they were made, here it is: Kingdom Hearts, Kingdom Hearts 2, Kingdom Hearts Chain of Memories, Kingdom Hearts 358/2 Days BUT THIS IS THE ORDER THEY ACTUALLY GO IN: Kingdom Hearts, Chain of Memories, 358/2 Days, Kingdom Hearts 2. Also, the other 2 upcoming ones: After Kingdom Hearts 2 will be Birth By Sleep (on psp) and Kingdom Hearts 3 (most likely on ps3)
