Utah is famous for Jell-O. For some reason, Utahns use more Jell-O than any other state in the nation. Almost every group gathering involves a Jell-O salad and "Funeral Potatoes". Funeral Potatoes are also sometimes known as "Mormon Potatoes".

Here's the general recipe for Funeral or Mormon Potatoes. Everyone has their own variations:

large white or yellow onion finely chopped
12 oz tub of sour cream
1 stick margarine, divided in half (some replace the margarine with cream cheese)
1 bag of frozen diced or shredded potatoes
2 cans of cream of chicken soup
2 cups of shredded cheddar cheese

2 & 1/2 cups of crushed cornflakes, french fried onions, or crushed potato chips
1 tsp. of black pepper

Melt half of the stick of margarine in pan and brown the onion

In mixing bowl stir together the potatoes, soups, cheese, pepper, sour creme, and onion

Place mixture in 13 x 9 baking dish and sprinkle the corn flakes on top, melt the other half of the margarine in microwave and pour evenly on top of the corn flakes

Bake at 350 for 30-40 minutes until the edges are browned and crispy looking.
