Food Network has some great ideas for using apples; 50 Things to Make with Apples. These are included there:
Waldorf Salad
1/2 cup sliced grapes
2 chopped apples (peeled and cored)
2 celery stalks, sliced thinly
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped walnuts
1/4 cup parsley
1/4 cup lemon juice
salt and pepper to taste, if desired
Toss all ingredients together and chill.
Creamy Apple Slaw
2 tablespoons mayonnaise
1 tablespoon mustard
2 teaspoons apple cider
1 cup grated celery
1 cup finely chopped apple
Salt, pepper and parsley to taste
