This is a good questions and by far the best cheeses are fontina and gorgonzola although many local regional cheeses in north Italy go equally as well, eg bitto.
Here in Brasil, sauce for polenta is Italian based, many here in Brasil, and sauces are tomato based with basil, and other herbs. There is no right nor wrong, no better than others. It is what you prefer or your guest. You might consider to have a selection available to guest so they put what ever they want on it, cheese or tomato based.
And if any Americans in the crowd, as we joke here in Brasil, just have a bottle of spiced ketchup available.
