Use a topic that is "instructive". Teach the judge's something. Stay away from politics and religion. Study your subject thoroughly. Know it inside and out. Write an informative speech and practice in front of a mirror. Keep your hands out of your pockets and off the lectern. Be ready for questions and answers. The butterflies will subside pretty quickly as you begin your speech. There is no substitute for research and facts about your topic, but were you asked to choose topics, on your own? That is unusual. You can use religion, politics, current events to include geology, Biology and oceanography. How about hurricanes or droughts from the weather side of earth? If you want to be instructive, choose something you know. I would do well with Oceanography, computer science or the geological changes of the US South West of the last million years. Would those work for you? See, you need to think about this one - and see if your teacher (coach, speech class senior) has the topics in a hat to draw.
That is much more normal for a competition. It is also pretty common to make up the speech with only 30 minutes of preparation...
