One of the best, and earliest, indicators of a cow's illness is a change in either what's going in or what's coming out. An observant farmer will have a good mental history of what his herd's manure looks and smells like, including color, consistency, fragrance and volume. Any change to this can indicate an infection or nutritional problem in the herd. Also, farmers keep close tabs on how much and what kind of feed and water their cows are consuming - a sick cow will often eat less or even nothing at all, and this decrease will show up in a visual surveillance of the feed bunk.
Other signs of illness in cows include increased heart rate and/or respiratory rate, lack of rumination (not chewing cud, no gut sounds), lethargy, unusual posture or gait, and general appearance of "not normal".
