There is as wide a variety of vegan desserts as non-vegan desserts. I do a fair amount of vegan baking and there are great vegan baking books. Essentially you have to replace the milk, eggs and butter with vegan counterparts which is not hard to do with all the great products available these days. If you don't already have favorite recipes try some that are already created for (and tested for) vegans. The book "The Joy of Vegan Baking" is great. We use Earth Balance butter substitute at my house, EnerG egg replacer and different non dairy milks (soy, almond, coconut) depending on what dessert it is. Good luck from Bunni Dot Com
The best results seems to be at VegWeb.com. They have recipies for every vegetable that you want and also options for some great desserts. The Ellen website also has great ideas since she is vegan and has a personal chef.

Most desserts are vegetarian; just make sure it doesn't include meat or some kind of chicken stock or something. (Examples include cookies, cake, chocolate, ice cream, etc.) If you are trying to make a vegan dessert (veganism excludes animal products such as dairy and honey as well as meat), fruit-based desserts are easy (fruit salad, for example), but vegan variations on cookies, cake, and other popular desserts can be found on websites such as VegWeb.com, VeganCooking.com, Allrecipes.com, Recipes.com, Myrecipes.com, and many others.
I make a lot of gluten-free, vegan desserts and they are very good. There are some ingredients that are used a lot such as cashews and tofu for creaminess. Or dates and oats for crust. Check out: Thesweetlifeonline.blogspot.com for some ideas. I have some fast and easy recipes, all labeled for special diets.

Agar-agar can be used in vegan cooking as a gelatin substitute to make desserts like puddings, jellies, and fruit gels. It can also be used to thicken soups, sauces, and even as a binder in vegan burgers or meatballs. Additionally, agar-agar can be used to create vegan versions of traditional Asian dishes like agar-agar noodles or agar-agar sushi rolls.
